Avocado & Mango Salad – Salade d’avocat & Mangue

When it comes to avocados, I am not very original: I usually eat them in salads, in dips, in cold soups or just cut into two, with a sizzle of lemon juice, salt and pepper. I have not yet been bold enough to try them in pastries or in pasta or as baked veggies. I will surely try soon, but for the moment, as it is pretty hot here, salads are a sure option! One of my favourite combination is to add a delicious juicy mango to the avocado, as well as some walnuts… It is not only tasty, it becomes a healthy cocktail of nutriments!   This time I served the salad in little “verrines“, which I think, give them quite a stylish look!! What do you think?

ingredients for 2 servings:

2 avocados, peeled and cut into small cubes

1 tablespoon walnuts

1 red onion, chopped

1 tablespoon fresh coriander

juice of 1/2 lemon or lime

2 tablespoons walnut oil (or olive oil)

2 tablespoons spread cheese, type philadelphia or kiri

1 big mango (or two medium size), peeled and diced

salt and freshly ground pepper

Method:

Whisk together the oil, lemon juice, salt and pepper.

Combine together avocado, onion, walnuts, half of the mango and coriander and add the dressing. Stir well.

Put the other half of the mango, cheese, salt and pepper in a blender. Blend until smooth.

Put half of  the mango mixture in each serving bowl/ plate / verrine. Pour over the avocado mixture.

Decorate with some walnuts and coriander.

Salade d’avocat à la mangue

Je ne suis pas très originale quand il s’agit de préparer les avocats: généralement, je les prépare en salade, en dip, en soupes froides ou simplement coupés en deux, avec quelques gouttes de jus de citron, du sel et du poivre. Je n’ai pas encore osé les essayer dans les gâteaux ou les pâtes ou cuits. Je vais sûrement essayer bientôt, mais pour le moment,  vu qu’il fait enfin un peu chaud ici, les salades restent une option sûre! L’un de mes mélange favoris consiste à ajouter une mangue juteuse et des noix à l’avocat… ce qui est non seulement délicieux, mais aussi un véritable cocktail de nutriments sains! Cette fois, j’ai servi la salade dans des verrines,ce qui, je crois, leur donne un certain style! Que pensez-vous?

Ingrédients pour 2 personnes:

2 avocats, pelés et coupés en petits cubes

1 cuillère à soupe de noix

1 oignon rouge, haché

1 cuillère à soupe de coriandre fraîche, ciselée

le jus de 1/2 citron ou lime

2 cuillères à soupe d’huile de noix (ou huile d’olive)

2 cuillères à soupe de fromage à tartiner, type Philadelphia ou Kiri

1 grosse mangue, pelée et coupée en cubes

Sel et poivre du moulin

Préparation:

Faire une vinaigrette avec l’huile, le jus de citron, le sel et le poivre.

Mélanger l’avocat, oignon, noix, la moitié de la mangue et la coriandre, puis ajoutez la vinaigrette. Bien remuer.

Mettre l’autre moitié de la mangue, le fromage, le sel et le poivre dans un mixer. Mélanger jusqu’à ce que la consistance  soit onctueuse.

Mettre la moitié du mélange à la mangue dans chaque bol / assiette/ verrine. Verser dessus le mélange d’avocats.

Décorez avec quelques cerneaux de noix et de la coriandre.

  1. Hey Sweet Artichoke, this salad sounds totally wonderful to me. I think it’s really creative. You know, the mangoes here about to ripen on the trees, so I’m definitely going to try something like this with mango and avocado. I need to look your quiche too, as I totally debated doing mine with rocket (arugula), spinach or zucchini…
    p.s. avocado squares are delicious in chicken or vegetable broth soups too! I just toss them in right after I pour the bowls for everyone-very rich and delicious.

  2. That’s four more ways to eat avocados than I know of. I just eat them as guacamole. This sounds good with the walnuts and mango added to it.
