Well, don’t be put off by the funny name of the recipe. In French these yummy easy to bake kind-of cookies are called “rochers à la noix de coco” (coconuts rocks) and somehow, I feel in English it sounds weird… Translating recipes names from French can be perilous exercise sometimes… It is like movies titles, which sometimes loose their essence in the translation!!
These are really easy to make and perfect when you have some egg whites left over from other recipes.
2 cups grated coconut (dessicated)
3 egg whites
3/4 cup raw cane sugar (normal sugar is fine, too)
zest of a lime (optional, but gives a nice taste 🙂 )
Pre-heat oven at 170C.
Combine all the ingredients together (do not beat the egg whites).
Take a full teaspoon of the mixture and shape as a little dome.
Place them on a baking tray, covered with baking paper.
Bake in the oven for 10-15 (until the edges start to become golden, the ones on the picture are slightly over-baked!!)
