Ingredients for 10-12 muffins:
2 big eggs (or 3 small)
1 teaspoon of vanilla sugar
80g butter, at room temperature
2 organic lemons
2 tablespoons poppy seeds
1 pinch salt
120 g flour
1 1/2 teaspoon of baking powder
optional, for icing:
3 tablespoon of confectioner sugar
1 teaspoon lemon juice
1 teaspoon lemon zest
1 teaspoon coloured sugar pearls
Preheat the oven at 180°C.
Beat the eggs with the sugar until whitish and fluffy. Add the yogurt, butter, the poppy seeds and the zest of the two lemons. Mix well. Add the juice of half a lemon.
In a bowl, mix the flour, baking powder and salt. Sieve this into the mixture and mix well.
Pour into the muffins cups and bake for about 20minutes.
Let them cool down.
I seldom put icing on my muffins, because normally I don’t like when it is too sweet. However, this time was a festive occasion and I thought that a little glow would be nice-looking! And icing is so quick and easy to prepare:
Mix the confectioner sugar, lemon juice, lemon zest together. Pour over the muffins and sprinkle with the coloured sugar pearls.
