today in my tiffin: matar paneer – peas & paneer cheese

Yesterday, I cooked matar paneer and as some of it was left over (hee hee, I counted too big proportions for 2!!) I decided to take it in my tiffin (bento/lunch box) for today’s lunch… Paneer is an indian cheese, very easy to make at home. It can be bought ready made, too. I will post the recipe of home-made paneer soon…

Ingredients for 4:

2 onions, finely chopped

4 cloves garlic, crushed

1 teaspoon grated ginger

1 green chili, finely chopped

400g green peas (I used frozen ones)

2 tomatoes

250 g paneer, cut into small cubes

1 yogurt (150g)

1 teaspoon coriander seeds

1 teaspoon turmeric

2 teaspoons garam masala (powder, I had tried earlier with whole garam masala and did not find it so tasty…)

2 bay leaves

2 tablespoons oil

1/2 cup fresh coriander, chopped

Dry roast the coriander seeds.

Heat the oil in a pan and add half of the garam masala. Fry the paneer in it for 2-3 minutes until golden brown. Keep aside.

Blend the coriander seeds, onion, garlic, ginger, chili and tomato into a paste. Add the turmeric.

Heat the oil in a pan and add the bay leaves. cook for 1-2 minutes and add the mixture. Stirr continuously for 3-4 minutes on medium heat. Season with salt and add the peas, paneer and yogurt. Stir well.

Add a cup of water, reduce the heat and simmer for 20-25 minutes.

Before serving, add the chopped coriander.
