Coriander Pesto

ingredients for pasta serving 4 people:

3 bunches of coriander

1/2 cup of pine nuts, slighly roasted

3 tablespoons of olive oil

1 clove garlic

salt and pepper

(optional) 1/2 cup of grated parmeggiano cheese

Blend all the ingredients into a fine paste. Add to the drained cooked pasta.

    • it is yumyum!!! you can replace the pine nuts by almonds or walnuts. I would slightly roast the almonds first but not the walnuts. It is also tasty without any nutty addition, but in that case, it is better to add some parmeggiano cheese 🙂
