I have never been a fan of cabbage and although I know this vegetable has lots of healthy properties, it never quite convinced my palate! However, during my recent holidays in India, I tasted a delicious way of cooking cabbage… I have carefully taken notes on how to prepare this miraculous dish… (well, at least for me…as I would never have thought to be cooking cabbage with so much delight!)
Ingredients for 2:
1 small green cabbage finely cut
1 potato, cut into small cubes
1 tablespoon vegetable oil (preferably not olive)
4 cardamom pods
4 cms cinnamon
1 teaspoon cumin seeds
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon turmeric powder
Heat the oil in a pan. Add the cardamom, cinnamon, cumin seeds and cloves. Stir until a nice smell come out and the seeds start to splutter.
Add the turmeric, cumin and coriander powder. Stir. Add the potato. Stir and cook 1-2 minutes. Add the cabbage and Lower the heat. Sprinkle some water and cover. Simmer for about 15 minutes and voilà, it is ready!
